Instructions
Cook rice in water until tender, about 15 minutes.
In a pan, heat olive oil and sauté garlic until fragrant.
Add cherry tomatoes, chickpeas, sun-dried tomatoes, spinach, and seasonings; cook until heated through.
Serve the vegetable mixture over cooked rice, top with hummus, and garnish with lemon wedges and parsley.
