  • 1 pound boneless, skinless chicken breasts, diced

Vegetables

  • 4 cups cauliflower rice (store-bought or homemade)
  • 1 cup broccoli florets
  • 1 cup diced bell peppers (any color)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook chicken in a pan with olive oil until browned, then set aside.
  • Sauté onion and garlic until fragrant.
  • Add vegetables, cook until tender, then stir in chicken and broth with seasonings.
  • Transfer to a baking dish, top with cheese, and bake for 20-25 minutes until bubbly.
  • Garnish with parsley and serve warm.

Notes

Use fresh parsley for best flavor. Adjust salt and pepper to taste.
