Protein

  • 2 cups cooked chicken (shredded or diced) (grilled, rotisserie, or baked)
  • 1 large apple (diced) (Honeycrisp, Fuji, or Granny Smith)
  • 0.5 cup celery (finely chopped)
  • 0.25 cup walnuts or pecans (chopped)
  • 0.25 cup dried cranberries (optional)
  • 0.25 cup red onion (finely diced, optional)
  • 0.5 cup Greek yogurt (or mayo) for creaminess
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon lemon juice prevents apples from browning
  • to taste Salt and pepper

Wraps

  • 4 pieces flour tortillas (or whole wheat, spinach, sun-dried tomato wraps)

Instructions
 

  • Mix cooked chicken, diced apple, celery, nuts, cranberries, and red onion in a bowl.
  • In a separate small bowl, combine Greek yogurt, Dijon mustard, honey, lemon juice, salt, and pepper.
  • Pour the dressing over the chicken mixture and toss to combine.
  • Spread the mixture onto each tortilla, add lettuce leaves, and roll up.

Notes

For extra flavor, chill the filling before assembling the wraps.
