  • 1.5 cups oats (old fashioned or rolled)
  • 1.25 cups flour
  • 0.5 cup sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 whole egg
  • 0.25 cup oil
  • 1 teaspoon vanilla
  • 1.5 cups ripe bananas (mashed) (about 3-4 bananas)
  • 0.5 cup oats (old fashioned)
  • 0.25 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter

Instructions
 

  • Preheat the oven to 375°F.
  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry ingredients, then fold in mashed bananas.
  • Divide batter into muffin tin and add topping mixture.
  • Bake for 18-20 minutes until a toothpick comes out clean.

Notes

For extra flavor, add nuts or chocolate chips to the batter.
