  • 4 tablespoons unsalted butter
  • cup honey (or pure maple syrup)
  • 1 cup mashed ripe banana about 3 medium bananas
  • ¼ cup milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups white whole wheat flour

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Melt butter, then whisk with honey, bananas, milk, and vanilla.
  • Add eggs and whisk until smooth, then mix in cinnamon, baking soda, and salt.
  • Gently fold in flour until just combined, do not over-mix.
  • Scoop batter into muffin tins, bake for 15-17 minutes, cool before serving.

Notes

For extra flavor, sprinkle cinnamon on top before baking.
