Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
In another bowl, mix Greek yogurt, maple syrup, melted coconut oil, eggs, and vanilla until smooth.
Combine wet and dry ingredients, then fold in diced apples.
Divide batter evenly into muffin cups and bake for 20 minutes or until golden and a toothpick comes out clean.
Notes
For extra moisture, add a splash of apple juice to the batter.
