Ingredients
  

Dry ingredients

  • 1.5 cups white whole wheat flour (180g)
  • 1 tsp baking powder (5g)
  • 0.5 tsp baking soda (2.5g)
  • 1.5 tbsp ground cinnamon (12g)
  • 0.5 tsp fine sea salt (3g)

Wet ingredients

  • 0.5 cup plain Greek yogurt (120g, room temperature)
  • 0.33 cup maple syrup (80ml)
  • 0.25 cup melted coconut oil (60ml)
  • 2 large eggs (Room temperature)
  • 1 tsp vanilla extract (5ml)
  • 1.5 cups finely diced Granny Smith apples (190g)

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, mix Greek yogurt, maple syrup, melted coconut oil, eggs, and vanilla until smooth.
  • Combine wet and dry ingredients, then fold in diced apples.
  • Divide batter evenly into muffin cups and bake for 20 minutes or until golden and a toothpick comes out clean.

Notes

For extra moisture, add a splash of apple juice to the batter.
