Ingredients
  

Dry ingredients

  • 1 ½ cups white whole wheat flour (180g)
  • 1 tsp baking powder (5g)
  • ½ tsp baking soda (2.5g)
  • 1 ½ tbsp ground cinnamon (12g)
  • ½ tsp fine sea salt (3g)

Wet ingredients

  • ½ cup plain Greek yogurt (120g, room temperature)
  • cup maple syrup (80ml)
  • ¼ cup melted coconut oil (60ml)
  • 2 large eggs (Room temperature)
  • 1 tsp vanilla extract (5ml)

Main ingredient

  • 1 ½ cups Granny Smith green apples (190g, finely diced)

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, combine Greek yogurt, maple syrup, melted coconut oil, eggs, and vanilla extract.
  • Mix wet ingredients into dry ingredients until just combined, then fold in diced apples.
  • Divide batter evenly among muffin cups and bake for 20 minutes or until golden and a toothpick comes out clean.

Notes

For extra flavor, sprinkle with a little extra cinnamon before baking.
