Ingredients
  

Dry ingredients

  • 1.5 cups all purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1.25 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Wet ingredients

  • 6 tablespoons unsalted butter (room temperature)
  • 0.5 cup packed brown sugar
  • 2 large eggs (room temperature)
  • 0.25 teaspoon espresso powder (optional)
  • 1 teaspoon vanilla extract

Filling

  • 0.75 cup Greek yogurt
  • 0.33 cup whole or skim milk
  • 1 tablespoon lemon juice or vinegar
  • 32 ounces whole milk ricotta cheese (drained)
  • 0.5 cup powdered sugar
  • 2 teaspoons vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Mix dry ingredients in one bowl and wet ingredients in another, then combine.
  • Drop spoonfuls onto baking sheets and bake for 10 minutes.
  • Allow to cool, then prepare filling by mixing Greek yogurt, ricotta, powdered sugar, vanilla, and lemon juice.
  • Spread filling on one cookie and top with another to form sandwiches.
