Ingredients
  

dry ingredients

  • 1.75 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

wet ingredients

  • 0.5 cup Greek yogurt, nonfat, plain
  • 0.5 cup milk
  • 0.5 cup light brown sugar, packed
  • 0.25 cup butter, melted
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups fresh spinach, packed
  • 0.5 cup mini chocolate chips
  • 2 tablespoons regular-sized chocolate chips
  • 2 tablespoons candy eyeball sprinkles

Instructions
 

  • Preheat oven to 350°F (175°C). Spray muffin tin with nonstick spray.
  • Mix dry ingredients: flour, baking powder, baking soda, salt.
  • Blend wet ingredients: yogurt, milk, sugar, melted butter, eggs, vanilla, spinach.
  • Combine wet and dry, then fold in mini chocolate chips. Top with regular chocolate chips and eyeballs.
  • Bake for 18-20 minutes until golden and springy. Add eyeballs after baking.

Notes

Use mini chocolate chips for better distribution and visual effect.
