Instructions
Chill beef for easier cutting; dice onions, rough chop carrots and celery, and set potatoes aside.
Sear seasoned beef in oil until browned; set aside.
Sauté onions, carrots, and celery; add garlic, tomato paste, and flour, cooking briefly.
Deglaze with Guinness, add beef, broth, thyme, bay leaves, salt, and pepper; simmer 2 hours.
Add potatoes, cook uncovered for 1 hour; remove herbs before serving.
Notes
Serve with Irish soda bread for an authentic experience.
