Ingredients
  

Oil

  • 2 tablespoons oil

Beef

  • 2-3 pounds beef chuck roast cut into 2-inch pieces

Vegetables

  • 2 medium yellow onions diced
  • 3 medium carrots rough chopped
  • 2 ribs celery rough chopped
  • 3 cloves garlic minced
  • 4 tablespoons Tomato paste
  • 3 tablespoons Flour all-purpose
  • 1 can Guinness Draught Stout
  • 3 cups Beef broth low-sodium
  • 3 sprigs Fresh thyme
  • 2 leaves Bay leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 8 oz Small golden potatoes about 225g

Instructions
 

  • Chill beef for easier cutting; dice onions, rough chop carrots and celery, and set potatoes aside.
  • Sear seasoned beef in oil until browned; set aside.
  • Sauté onions, carrots, and celery; add garlic, tomato paste, and flour, cooking briefly.
  • Deglaze with Guinness, add beef, broth, thyme, bay leaves, salt, and pepper; simmer 2 hours.
  • Add potatoes, cook uncovered for 1 hour; remove herbs before serving.

Notes

Serve with Irish soda bread for an authentic experience.
