  • 1/4 cup chocolate protein powder (whey or plant-based)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup almond flour (or oat flour)
  • 1 tablespoon mini chocolate chips (optional)

Wet ingredients

  • 2 tablespoons Greek yogurt (plain, non-fat)
  • 1 tablespoon maple syrup (or honey)
  • 2 tablespoons almond milk
  • 1 egg egg
  • 1/2 teaspoon baking powder
  • Pinch salt

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix egg, Greek yogurt, almond milk, and maple syrup until smooth.
  • Stir in protein powder, cocoa, almond flour, baking powder, and salt to form batter.
  • Fold in chocolate chips if using, then divide batter into muffin cups.
  • Bake for 10–12 minutes; cool slightly before serving.

Notes

For extra flavor, add a splash of vanilla extract or a sprinkle of sea salt on top before baking.
