Ingredients
  

Protein

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon soy sauce
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 cup mushrooms chopped
  • 1/4 cup onion diced
  • 1/2 cup zucchini sliced
  • 1/2 cup yellow squash sliced
  • 1/2 cup bell peppers chopped
  • 1/2 cup broccoli florets

Carbohydrate

  • 1 cup cooked white or brown rice

Instructions
 

  • Preheat oven to 400°F (200°C). Toss zucchini, squash, peppers, and broccoli with olive oil, salt, and pepper. Roast for 15-20 minutes.
  • Sauté onions and mushrooms in olive oil for 3-4 minutes.
  • Add ground turkey, season with spices and soy sauce, cook until browned, then simmer 2 minutes.
  • Place rice in bowls, top with roasted veggies and turkey mixture.
  • Garnish with extra soy sauce or preferred sauce.
