Ingredients
  

Meat

  • 1 lb ground turkey (7% fat)
  • 2 Tablespoons olive oil
  • 1 Tablespoon taco seasoning homemade or store-bought
  • 1 small onion
  • 4 large garlic cloves
  • to taste Salt and black pepper
  • ½ cup chicken stock

Toppings

  • Guacamole
  • Pico de gallo
  • Canned sweet corn
  • Shredded sharp cheddar cheese
  • Black beans substitute with pinto beans
  • Fresh cilantro
  • Lime wedges
  • Sour cream
  • Lettuce
  • 4-6 cups cooked cilantro lime rice or any cooked rice

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add chopped onion and garlic; sauté until soft and fragrant.
  • Add ground turkey; cook until browned and no longer pink, then season with salt, pepper, and taco seasoning.
  • Pour in chicken stock; simmer until liquid reduces and turkey is juicy.
  • Serve turkey over rice with desired toppings like guacamole, pico de gallo, corn, cheese, beans, cilantro, lime, sour cream, and lettuce.
