Ingredients
  

Meat

  • 1 pound ground turkey
  • 2 medium zucchinis trimmed and sliced
  • 1 tablespoon olive oil
  • 1/2 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a skillet. Sauté chopped onion until soft, then add minced garlic and cook briefly.
  • Add ground turkey, cook until browned. Meanwhile, prepare zucchini slices.
  • Stir in zucchini slices, cook for 4-5 minutes. Add seasonings and chicken broth, simmer briefly.
  • Sprinkle Parmesan cheese, stir until melted. Serve hot.

Notes

Use fresh zucchini for best flavor. Adjust seasoning to taste.
