Ingredients
  

Protein

  • 1 lb ground turkey

Vegetables

  • 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper red bell pepper diced
  • 2 cups fresh spinach optional
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp chili powder optional
  • to taste salt and black pepper

Instructions
 

  • Cook diced sweet potatoes in a skillet with 1 tbsp olive oil for 8–10 minutes until tender.
  • Remove sweet potatoes; cook ground turkey in the same skillet until browned, 5–7 minutes.
  • Add onion, garlic, and red pepper; cook 3–4 minutes until vegetables soften.
  • Return sweet potatoes; season with spices, then fold in spinach and cook 1–2 minutes.

Notes

Feel free to add more spices or vegetables to customize.
