Instructions
Cook diced sweet potatoes in a skillet with 1 tbsp olive oil for 8–10 minutes until tender.
Remove sweet potatoes; cook ground turkey in the same skillet until browned, 5–7 minutes.
Add onion, garlic, and red pepper; cook 3–4 minutes until vegetables soften.
Return sweet potatoes; season with spices, then fold in spinach and cook 1–2 minutes.
