Ingredients

  • 2 lbs ground chicken 95% lean
  • ¾ cup tomato sauce
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tbsp oil
  • Salt and pepper to taste Salt and pepper
  • 12 oz shredded cabbage pre shredded coleslaw or salad mix
  • ½ tbsp oil
  • 1 tsp garlic powder
  • cups cooked rice
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 diced Roma tomato
  • 1 small white onion
  • 5 cloves garlic
  • ½ tbsp oil
  • ½ bunch cilantro
  • 2 Tbsp lime juice
  • Salt to taste Salt

Instructions
 

  • Sauté ground chicken with spices and tomato sauce until cooked.
  • Cook rice and prepare vegetables: dice tomatoes, chop onion, jalapeños, and cilantro.
  • Mix lime juice, cilantro, and season with salt.
  • Assemble bowls with rice, chicken, cabbage, and fresh toppings.
