green pepper (seeded & diced)

jasmine rice (basmati also works)

Instructions
Add ground beef to a skillet and cook until browned, then drain excess grease.
Add remaining ingredients except cheese, bring to a boil, then simmer covered for 12-16 minutes.
Remove from heat, sprinkle cheese on top, cover until melted, then serve warm.
Notes
Feel free to customize with your favorite herbs or add a dash of hot sauce for extra flavor.
