Instructions
Heat oil in a large skillet, cook beef for 8-10 minutes until browned, then add onion and garlic, cooking until beef is no longer pink.
Chop vegetables while beef cooks.
Add zucchini, broccoli, and bell pepper; stir in soy sauce and tomato paste. Cover and simmer for 6-8 minutes until vegetables are tender.
Garnish with chopped parsley and serve hot.
Notes
Use fresh parsley for best flavor and adjust seasoning as needed.
