Ingredients
  

Meat

  • 1 lb grass-fed ground beef
  • 1 tbsp olive oil

Vegetables

  • 2 cups zucchini (cubed)
  • 1 cup broccoli (florets)
  • 3/4 cup red bell pepper (chopped)
  • 1/2 cup red onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce (or coconut aminos)
  • to taste salt and pepper

Fresh herbs

  • 1 bunch fresh parsley

Instructions
 

  • Heat oil in a large skillet, cook beef for 8-10 minutes until browned, then add onion and garlic, cooking until beef is no longer pink.
  • Chop vegetables while beef cooks.
  • Add zucchini, broccoli, and bell pepper; stir in soy sauce and tomato paste. Cover and simmer for 6-8 minutes until vegetables are tender.
  • Garnish with chopped parsley and serve hot.

Notes

Use fresh parsley for best flavor and adjust seasoning as needed.
