Meat

  • 1 pound ground beef
  • 1 cup white or brown rice
  • 1 cup beef broth (or water)
  • 1 packet taco seasoning mix
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup black beans (canned, drained, and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado sliced avocado
  • Fresh cilantro for garnish

Instructions
 

  • Cook rice in beef broth or water according to package instructions.
  • In a skillet, brown the ground beef until fully cooked; drain excess fat.
  • Add taco seasoning to the beef along with diced tomatoes, black beans, and corn; simmer for 5 minutes.
