Ingredients
  

Meat and Rice

  • 1 lb ground beef 85% lean preferably
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 packet or 2 tablespoons taco seasoning mix
  • 0.5 cup tomato sauce or salsa
  • 3 cups cooked white or brown rice
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 cup black beans rinsed and drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 0.25 cup fresh cilantro chopped
  • to taste Lime wedges for serving
  • to taste Salt and pepper

Instructions
 

  • Cook the rice according to package instructions, then keep warm.
  • In a skillet, heat olive oil and sauté onion until translucent, then add garlic and cook briefly.
  • Add ground beef, cook until browned, drain excess fat, then season with salt and pepper.
  • Stir in taco seasoning and tomato sauce, simmer until thickened, about 5 minutes.
  • Prepare toppings: warm corn and beans, slice avocado, halve cherry tomatoes, and chop cilantro.
  • Assemble bowls with rice, beef mixture, toppings, cheese, and cilantro. Squeeze lime over before serving.

Notes

For extra flavor, add hot sauce or salsa as desired.
