Meat

  • 1 lb 80/20 ground beef
  • 2 large eggs
  • ½ cup shredded Parmesan cheese
  • ½ cup oats
  • ¼ cup Greek yogurt
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet.
  • Mix eggs and Greek yogurt in a bowl, then add oats, Parmesan, onion, garlic, seasoning, salt, and pepper.
  • Add ground beef and gently combine until just mixed.
  • Shape mixture into 12 meatballs and place on the baking sheet.
  • Bake for 20-25 minutes, flipping halfway, until internal temperature reaches 160°F (71°C). Let rest 5 minutes before serving.

Notes

Using leaner beef can reduce fat content; ensure meatballs are cooked thoroughly.
