Ingredients
  

Meat

  • 1 lb lean ground beef (93%)

Vegetables

  • 2 medium sweet potatoes, peeled and diced
  • 1 diced yellow onion

Produce

  • 1 sliced avocado

Dairy

  • 1 cup cottage cheese

Pantry

  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon

Salt and pepper, to taste

Optional garnishes

  • chopped cilantro, red pepper flakes, lime juice as desired

Instructions
 

  • Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway.
  • Heat 1 tbsp olive oil in a skillet over medium heat. Sauté diced onion until soft, about 3–4 minutes.
  • Add ground beef to the skillet. Cook for 6–8 minutes, breaking apart. Stir in taco seasoning, salt, and pepper. Cook until browned.
  • Assemble bowls: sweet potatoes on bottom, then ground beef, avocado slices, and cottage cheese. Drizzle hot honey over each bowl and add optional garnishes.
  • Serve immediately and enjoy while warm.
