Ingredients
  

Meat

  • 1 pound lean ground beef

Vegetables

  • 2 medium zucchinis zucchinis, diced bite-sized pieces
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Pantry

  • 2 tablespoons tomato paste or diced tomatoes use tomato paste or diced tomatoes
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon dried oregano
  • 0.25 teaspoon chili flakes adjust to preference
  • 2 tablespoons chopped fresh parsley or basil
  • Shredded mozzarella or Parmesan cheese for serving cheese

Instructions
 

  • Dice zucchini, chop onion and garlic, and prepare ground beef.
  • Heat olive oil in a skillet, cook beef until browned, then drain excess fat.
  • Add onion and garlic, cook until fragrant, then stir in zucchini and cook until tender.
  • Mix in tomato paste or diced tomatoes with seasonings, simmer for 5 minutes.
  • Stir in herbs, adjust seasoning, and serve hot with cheese or parsley.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
