Instructions
Dice zucchini, chop onion and garlic, and prepare ground beef.
Heat olive oil in a skillet, cook beef until browned, then drain excess fat.
Add onion and garlic, cook until fragrant, then stir in zucchini and cook until tender.
Mix in tomato paste or diced tomatoes with seasonings, simmer for 5 minutes.
Stir in herbs, adjust seasoning, and serve hot with cheese or parsley.
