Instructions
Preheat oven to 375°F (190°C).
Cook onion and garlic in olive oil until fragrant. Add ground beef and seasonings; cook until browned. Stir in beef broth and simmer.
Mix beef mixture with diced potatoes and sour cream. Fold in half of the cheese.
Transfer to baking dish, top with remaining cheese, cover with foil, and bake for 30 minutes. Remove foil and bake 10-15 minutes until bubbly.
Notes
Let the casserole rest for 10 minutes before serving for best texture.
