Ingredients
  

Meat and Potatoes

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 0.5 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 0.5 teaspoon paprika

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook onion and garlic in olive oil until fragrant. Add ground beef and seasonings; cook until browned. Stir in beef broth and simmer.
  • Mix beef mixture with diced potatoes and sour cream. Fold in half of the cheese.
  • Transfer to baking dish, top with remaining cheese, cover with foil, and bake for 30 minutes. Remove foil and bake 10-15 minutes until bubbly.

Notes

Let the casserole rest for 10 minutes before serving for best texture.
