Ingredients
  

  • 2 medium bell peppers
  • 1 medium zucchini
  • 1 medium onions
  • 1 cup mushrooms
  • 1/4 cup olive oil
  • 2 teaspoons minced garlic
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 cup hummus
  • 1/2 cup Greek yogurt
  • 1 cup cheese shredded
  • 1 cup spinach fresh
  • 1 cup arugula fresh
  • 1 medium avocado sliced
  • 1 cup quinoa cooked
  • 1 cup chickpeas cooked
  • 1/2 cup tzatziki
  • 1 tablespoon pesto

Instructions
 

  • Preheat and prepare the grill for medium heat.
  • Season the sliced vegetables with salt, pepper, cumin, and paprika.
  • Grill the vegetables for 5-7 minutes on each side until tender.
  • Prepare the tortillas by lightly brushing with olive oil and grilling for 1-2 minutes.
  • Assemble the wraps with hummus, grilled vegetables, spinach, arugula, avocado, quinoa, chickpeas, tzatziki, and pesto.
  • Wrap it up tightly and serve immediately.
