Instructions
Preheat grill or grill pan over high heat. Slice vegetables thinly and toss with olive oil, vinegar, salt, pepper, and herbs.
Grill vegetables until tender and grill marks appear, about 2-3 minutes per side.
Spread 2 tablespoons hummus on each tortilla, layer grilled vegetables, then roll up tightly.
Place wraps seam side down on grill for 3-5 minutes until warmed and grill marks form.
Remove wraps, let cool for 5 minutes, then slice in half and serve.
