Grilled Peach and Blueberry Yoghurt Parfaits

Ingredients
  

Peaches

  • 4 pieces ripe peaches halved and pitted
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar or coconut sugar
  • ½ teaspoon ground cinnamon

Vegetable oil

  • for brushing or spraying grill Vegetable oil for brushing or spraying grill

Yogurt

  • 2 cups Greek yoghurt or plant based yoghurt for serving
  • 2-4 tablespoons honey or maple syrup for serving

Granola

  • 1 cup granola for serving
  • ½ cup blueberries
  • ¼ cup Remix Snacks Chocolate Bean Bark with peach chunks, chopped for serving
  • as needed Fresh mint leaf for garnish (optional)

Instructions
 

  • Preheat grill to medium-high and prepare peaches with sugar and cinnamon.
  • Grill peaches cut side down until grill marks form, about 2-3 minutes per side. Cool and cut into smaller wedges.
  • Divide yogurt into bowls, top with grilled peaches, blueberries, granola, drizzle with honey, and sprinkle with chocolate bark.

Notes

For extra flavor, add fresh mint leaves as garnish.
