Instructions
Marinate chicken with lemon juice, zest, olive oil, garlic, thyme, oregano, salt, and pepper. Grill until cooked through, about 6-8 minutes per side.
Cook quinoa in water or broth until tender, about 15 minutes. Fluff with a fork and let cool slightly.
Combine diced cucumber, tomato, and chopped parsley with cooked quinoa. Toss gently to combine.
Slice grilled chicken and serve over the quinoa salad. Garnish with additional parsley if desired.
Notes
For extra flavor, marinate the chicken for at least 30 minutes before grilling.
