Ingredients
  

Protein

  • 4 pieces boneless chicken breasts
  • 2 lemons lemons (juice and zest) Use fresh lemons for best flavor
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste none Salt and pepper

Grain

  • 1 cup quinoa Rinse before cooking
  • 2 cups water or vegetable broth Choose based on preference

Vegetables

  • 1 piece cucumber diced
  • 1 piece tomato diced
  • 1/4 cup fresh parsley chopped, for garnish

Instructions
 

  • Marinate chicken with lemon juice, zest, olive oil, garlic, thyme, oregano, salt, and pepper. Grill until cooked through, about 6-8 minutes per side.
  • Cook quinoa in water or broth until tender, about 15 minutes. Fluff with a fork and let cool slightly.
  • Combine diced cucumber, tomato, and chopped parsley with cooked quinoa. Toss gently to combine.
  • Slice grilled chicken and serve over the quinoa salad. Garnish with additional parsley if desired.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before grilling.
