Ingredients
  

Protein

  • 4 pieces boneless, skinless chicken breasts

Grain

  • 1 cup quinoa

Oil

  • 2 tablespoons olive oil

Flavorings

  • 1 lemon lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Seasoning

  • to taste Salt and pepper

Garnish

  • Fresh parsley for garnish

Instructions
 

  • Rinse quinoa and cook in boiling water for 15 minutes, then fluff and set aside.
  • Mix olive oil, lemon zest, lemon juice, garlic, oregano, thyme, salt, and pepper to make marinade.
  • Marinate chicken in the mixture for at least 30 minutes.
  • Preheat grill and cook chicken 6-8 minutes per side until fully cooked.
  • Serve chicken over quinoa and garnish with parsley.

Notes

Marinate the chicken for maximum flavor and ensure it reaches an internal temperature of 165°F (75°C).
