Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Salad

  • 6 cups mixed salad greens
  • 1 piece cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion red onion, thinly sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil (for dressing)
  • 1 teaspoon Dijon mustard

Instructions
 

  • Preheat grill to medium-high heat.
  • Rub chicken with olive oil, oregano, garlic powder, salt, and pepper. Grill 6-7 mins per side until cooked through.
  • Let chicken rest, then slice. Toss greens, cucumber, tomatoes, and onion in a bowl.
  • Whisk lemon juice, olive oil, Dijon mustard, salt, and pepper for dressing.
  • Top salad with sliced chicken, drizzle with dressing, and serve.

Notes

For extra flavor, marinate chicken in lemon juice and herbs before grilling.
