sweet potatoes
peeled and diced into 1-inch cubes.

cooked quinoa or brown rice

tahini
well-stirred.
Instructions
Marinate the chicken with olive oil, lemon juice, Dijon mustard, garlic, oregano, paprika, salt, and pepper. Refrigerate for at least 30 minutes.
Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and cayenne. Roast for 20-25 minutes.
Preheat grill to medium-high heat. Grill chicken for 5-7 minutes per side until cooked through.
Prepare tahini dressing by whisking tahini, lemon juice, maple syrup, and garlic. Thin with ice water to desired consistency.
Assemble bowls with quinoa or greens, topped with sweet potatoes, grilled chicken, avocado, and tahini dressing.
Notes
For extra flavor, let the chicken marinate longer, but avoid more than 4 hours due to the acidity of lemon juice.
