Instructions
Whisk olive oil, garlic, lemon juice, and oregano. Marinate chicken for 30 minutes.
Preheat grill. Grill chicken 5-7 minutes per side until cooked. Rest briefly.
Cook rice in water or broth for 15-20 minutes until tender.
Toss vegetables with oil, salt, pepper, and roast at 425°F (220°C) for 15-20 minutes.
Slice grilled chicken. Assemble bowls with rice, chicken, vegetables, and optional toppings.
Notes
For extra flavor, add a splash of soy sauce or stir-fry sauce.
