Ingredients
  

Marinade

  • 1 pounds boneless, skinless chicken breast, cut into bite-sized pieces
  • 0.25 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Rice

  • 1 cup uncooked white or brown rice
  • 2 cups water or chicken broth

Vegetables

  • 1 cup mixed roasted vegetables (e.g., carrots, zucchini, bell peppers)
  • 0.25 cup chopped fresh cilantro (optional)
  • 2 tablespoons soy sauce or stir-fry sauce (optional)

Instructions
 

  • Whisk olive oil, garlic, lemon juice, and oregano. Marinate chicken for 30 minutes.
  • Preheat grill. Grill chicken 5-7 minutes per side until cooked. Rest briefly.
  • Cook rice in water or broth for 15-20 minutes until tender.
  • Toss vegetables with oil, salt, pepper, and roast at 425°F (220°C) for 15-20 minutes.
  • Slice grilled chicken. Assemble bowls with rice, chicken, vegetables, and optional toppings.

Notes

For extra flavor, add a splash of soy sauce or stir-fry sauce.
