Ingredients
  

Marinade

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 tsp paprika
  • Salt and pepper to taste Salt and pepper to taste

Base

  • 2 cups cooked white or brown rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels, fresh, canned, or thawed frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado sliced
  • 0.25 cup chopped cilantro
  • 0.25 cup shredded cheese (optional)
  • 0.25 cup sour cream or Greek yogurt (optional)

For serving

  • as needed Fresh lime wedges

Instructions
 

  • Mix olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Marinate chicken for at least 30 minutes.
  • Preheat grill and cook chicken 5-6 minutes per side until cooked through. Rest and slice.
  • Prepare rice, beans, and toppings while chicken grills.
  • Divide rice into bowls, top with sliced chicken, beans, corn, tomatoes, avocado, cilantro, cheese, and sour cream. Serve with lime wedges.
