  • 4 pounds beef tenderloin roast
  • 1-2 Tbs. olive oil for rubbing the roast
  • 1/4 - 1/3 cup dry rub seasoning blend favorite type

Instructions
 

  • Remove the beef from refrigeration and let it rest at room temperature for 1 hour.
  • Rub the beef with olive oil and season with dry rub or salt and pepper.
  • Preheat grill to high heat (425-450°F). Tie the tenderloin with kitchen string if desired.
  • Grill the beef, turning as needed, until caramelized, about 10 minutes. Then, cook at medium heat for 15-20 minutes until internal temperature reaches 115-120°F.
  • Rest the beef, covered with foil, for 15-20 minutes. Slice and serve immediately.
