Ingredients
  

Dry ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch salt

Wet ingredients

  • 1 cup plain Greek yogurt
  • 1 large egg
  • ½ cup milk
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract

For cooking

  • Butter or oil for greasing skillet

Instructions
 

  • Mix dry ingredients in a bowl. Whisk wet ingredients separately until smooth.
  • Combine wet and dry ingredients until just mixed. Do not overmix.
  • Heat skillet over medium and add butter or oil.
  • Pour ¼ cup batter per pancake; cook until bubbles form, then flip and cook until golden.
  • Serve warm with toppings of choice.

Notes

For extra flavor, add fresh berries or nuts on top.
