Ingredients
  

Batter

  • 1 cup plain Greek yogurt
  • 3 large eggs
  • ¾ cup all-purpose flour
  • ½ cup whole milk
  • 2 tablespoons melted butter, plus more for cooking
  • 1 tablespoon honey or maple syrup
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Pinch salt

Filling

  • 1 cup Greek yogurt (for filling)
  • 2 tablespoons honey (for filling)
  • 1 teaspoon cinnamon (for filling)
  • ½ teaspoon vanilla extract (for filling)

Coating

  • ¼ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 2 tablespoons melted butter (for brushing)

Instructions
 

  • Blend Greek yogurt, eggs, flour, milk, melted butter, honey, cinnamon, vanilla, baking powder, and salt until smooth.
  • Let batter rest for 20-30 minutes. Prepare filling by mixing Greek yogurt, honey, cinnamon, and vanilla. Mix sugar and cinnamon for coating.
  • Heat a non-stick pan over medium heat, pour ¼ cup batter, cook 1½-2 minutes, flip, and cook 1 minute. Fill with cinnamon cream, roll, then brush with melted butter and sprinkle cinnamon sugar.
