Let batter rest for 20-30 minutes. Prepare filling by mixing Greek yogurt, honey, cinnamon, and vanilla. Mix sugar and cinnamon for coating.
Heat a non-stick pan over medium heat, pour ¼ cup batter, cook 1½-2 minutes, flip, and cook 1 minute. Fill with cinnamon cream, roll, then brush with melted butter and sprinkle cinnamon sugar.
