Instructions
Mix oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper to make marinade.
Marinate chicken thighs for 1-2 hours in fridge.
Preheat oven to 350°F (180°C). Place chicken in baking dish and pour marinade over.
Bake for 40-45 minutes until cooked through and skin is crispy.
Notes
For extra flavor, baste the chicken during baking and garnish with lemon slices before serving.
