Instructions
Boil 960ml water, add rice. Simmer 20–25 mins, then rest 5 mins.
Mix soy, sugar, cornstarch, ginger, garlic, red pepper flakes. Marinate chicken 15–30 mins.
Heat 15ml oil in wok. Stir fry veg 4–5 mins. Set aside.
Add 15ml oil. Sear chicken 2 mins per side.
Add veg and marinade. Stir, boil, reduce 5–7 mins until thick and chicken is cooked. Serve over rice.
Notes
Use high heat and quick stir-frying for best results.
