Instructions
Preheat oven to 400°F (200°C). Coat a baking dish with nonstick spray.
Pat chicken dry, season with salt and pepper. Whisk honey, balsamic vinegar, garlic, and olive oil.
Arrange potatoes in dish, drizzle with olive oil, season, and toss. Place chicken on top and pour glaze over.
Bake for 25-30 minutes until chicken reaches 165°F (75°C). Rest for 5 minutes before serving.
