Garlic Shrimp in Creamy Mushroom Sauce

Ingredients
  

olive oil

  • 2 tablespoons olive oil divided
  • 1 pound raw shrimp peeled and deveined
  • Kosher salt and pepper Kosher salt and pepper to taste
  • 1 pound button mushrooms sliced
  • 3-4 cloves garlic chopped
  • 2/3 cup heavy cream or lite coconut milk in cans
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons parsley chopped

Instructions
 

  • Heat 1 tablespoon of oil in a skillet over medium heat. Cook shrimp 3-4 minutes until pink, then set aside.
  • Add remaining oil, cook mushrooms 4-5 minutes, then add garlic and cook 1 minute.
  • Stir in heavy cream, Parmesan, and parsley; simmer briefly.
  • Return shrimp to skillet, toss with sauce, and serve.

Notes

Serve immediately for best flavor.
