Instructions
Heat 1 tablespoon of oil in a skillet over medium heat. Cook shrimp 3-4 minutes until pink, then set aside.
Add remaining oil, cook mushrooms 4-5 minutes, then add garlic and cook 1 minute.
Stir in heavy cream, Parmesan, and parsley; simmer briefly.
Return shrimp to skillet, toss with sauce, and serve.
