Layer halved potatoes in crockpot, season chicken with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes. Place chicken on potatoes.
Pour chicken broth over ingredients. Sprinkle minced garlic and parmesan cheese on top.
Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and cooked through.
Check internal temperature; serve with sauce and garnish with parsley if desired.
