  • 1 tsp paprika
  • 1 tsp garlic powder

Cooking Oils and Fats

  • 2 tbsp olive oil (extra virgin)
  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp butter (salted)

Vegetables

  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)

Broth and Liquids

  • 2 cups chicken broth (reduced sodium)
  • cup greek yogurt (plain, full-fat preferred)
  • cup whole milk

Pasta and Cheese

  • 8 oz chickpea pasta (uncooked)
  • ¾ cup parmesan cheese (grated)
  • 2 tbsp parsley (chopped)

Salt and Pepper

Instructions
 

  • Sauté chicken thighs with Italian seasoning, paprika, and garlic powder until cooked through.
  • Add diced onion and minced garlic; cook until fragrant and softened.
  • Pour in chicken broth, Greek yogurt, and milk; bring to a boil.
  • Add chickpea pasta and cook until al dente, then stir in Parmesan cheese and parsley.
  • Season with salt and pepper, then serve hot.

Notes

Use full-fat Greek yogurt for creaminess and flavor.
