  • 1.5 lbs boneless, skinless chicken breasts or thighs

Vegetables

  • 1.5 lbs baby potatoes, halved

Oils & Fats

  • 2 tbsp olive oil
  • 2 tbsp butter, melted

Spices & Seasonings

  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Cheese & Herbs

  • 0.5 cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (for garnish)

Garlic Herb Sauce

  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp all-purpose flour (optional, for thicker sauce)
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tbsp chopped fresh parsley

Additional

Instructions
 

  • Preheat oven to 400°F (200°C) and prepare a sheet pan.
  • Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper; spread on one side of the pan.
  • Pat chicken dry, brush with melted butter, season, and place on the other side of the pan.
  • Bake for 25–30 minutes, flipping halfway, until cooked and crispy.
  • Make the garlic herb sauce by melting butter, cooking garlic, adding flour, broth, cream, Parmesan, and herbs; simmer until thickened.
  • Pour sauce over roasted chicken and potatoes; garnish with Parmesan and parsley before serving.

Notes

For extra flavor, sprinkle additional Parmesan or herbs before serving.
