Instructions
Sauté minced garlic and chopped onion in oil until fragrant and translucent.
Add ground beef and cook until browned.
Stir in lime juice, soy sauce, honey, diced red pepper, and cooked sweet potatoes. Cook for 5 minutes.
Add black beans and spinach; cook until spinach wilts, about 2 minutes.
Serve hot, garnished as desired.
Notes
For a vegetarian version, substitute beef with lentils or tofu.
