Ingredients
  

Meat

  • 2 lbs ground beef (85/15)
  • 3 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp minced garlic
  • 1 medium sweet onion
  • 1 medium red pepper
  • 2 medium sweet potatoes
  • 4 cups spinach
  • 1 can black beans
  • 1 tbsp oil

Instructions
 

  • Sauté minced garlic and chopped onion in oil until fragrant and translucent.
  • Add ground beef and cook until browned.
  • Stir in lime juice, soy sauce, honey, diced red pepper, and cooked sweet potatoes. Cook for 5 minutes.
  • Add black beans and spinach; cook until spinach wilts, about 2 minutes.
  • Serve hot, garnished as desired.

Notes

For a vegetarian version, substitute beef with lentils or tofu.
