Ingredients
  

Salmon

  • 4 pieces skinless salmon fillets 4-5 oz each
  • 4 cloves fresh garlic (minced)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • juice AND zest of 1 lime lime juice and zest
  • 2 Tbsps raw honey
  • 1 Tbsp olive oil
  • to taste sea salt and fresh ground black pepper
  • 2 cups cooked quinoa or brown rice
  • 1 large ripe avocado
  • 2 cups quartered cherry tomatoes
  • 1-2 jalapeno peppers sliced
  • 3 green onions sliced

Instructions
 

  • Marinate salmon with garlic, herbs, lime, honey, and oil for 30 minutes.
  • Cook quinoa or rice and prepare veggies.
  • Cook salmon in a skillet for 3-4 minutes per side until golden and flaky.
  • Assemble bowls with quinoa, salmon, avocado, tomatoes, jalapeƱos, and green onions. Squeeze lime over everything.
  • Finish with lime juice, season with salt and pepper, and serve.

Notes

Store leftovers in the refrigerator for up to 3 days for best freshness.
