  • 6 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • to taste Salt and pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Pat chicken dry, season with salt and pepper.
  • Mix olive oil, rosemary, thyme, garlic, and paprika. Rub over chicken thighs.
  • Sear chicken skin-side down in a skillet for 5-7 minutes until crispy.
  • Flip thighs, transfer skillet to oven, and roast for 20-25 minutes.
  • Rest for 5 minutes before serving.

Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
