Instructions
Preheat oven to 400°F (200°C). Mix garlic, thyme, rosemary with olive oil; season with salt and pepper. Rub over chicken.
Sear chicken in butter over medium-high heat for 3-4 minutes per side. Transfer to oven and bake for 15-20 minutes.
Cook potatoes in boiling salted water until tender, about 15-20 minutes. Drain, add milk, butter, salt, and pepper; mash until smooth.
In a skillet, melt butter, sauté carrots for 5-6 minutes, add honey, cook 3-4 minutes until glazed and tender.
Notes
Ensure chicken reaches an internal temperature of 165°F (75°C) for safety.
