Ingredients
  

Main

  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1 tablespoon butter

Mashed Potatoes

  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter

Glazed Carrots

  • 1 pound carrots, peeled and sliced into coins
  • 2 tablespoons butter
  • 2 tablespoons honey
  • to taste Salt and pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Mix garlic, thyme, rosemary with olive oil; season with salt and pepper. Rub over chicken.
  • Sear chicken in butter over medium-high heat for 3-4 minutes per side. Transfer to oven and bake for 15-20 minutes.
  • Cook potatoes in boiling salted water until tender, about 15-20 minutes. Drain, add milk, butter, salt, and pepper; mash until smooth.
  • In a skillet, melt butter, sauté carrots for 5-6 minutes, add honey, cook 3-4 minutes until glazed and tender.

Notes

Ensure chicken reaches an internal temperature of 165°F (75°C) for safety.
