  • 2 tablespoons Olive Oil (Use good quality for best flavor)
  • 1 teaspoon Paprika (Smoked paprika can be used for a unique twist)

  • 1/4 teaspoon Chili Flakes (Adjust for desired heat)

Herbs

  • 2 sprigs Fresh Herbs (Rosemary & Thyme) (Dried can be substituted)

Broth

  • 4 cups Broth (Vegetable or Chicken) (Low-sodium options preferred)

Instructions
 

  • Sauté minced garlic in olive oil until fragrant.
  • Add chopped potato, spices, and herbs; cook for 5 minutes.
  • Pour in broth and bring to a boil.
  • Add chickpeas, reduce heat, and simmer for 20 minutes.
  • Remove herbs, blend part of the soup if desired, and season to taste.

Notes

For extra creaminess, blend a portion of the soup before serving.
