Garlic Butter Chicken with Parmesan Rice

Ingredients
  

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 tsp salt
  • 1 tsp black pepper

Dairy & Fats

  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon fresh parsley, chopped

Grains

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tablespoon butter
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions
 

  • Season chicken breasts with salt and black pepper.
  • In a skillet, melt 2 tablespoons of butter and cook chicken 6-7 minutes per side until browned and cooked through. Remove and set aside.
  • In the same skillet, add remaining butter, garlic, and Italian seasoning; cook until fragrant (~30 seconds). Return chicken to coat in sauce.
  • Rinse rice, then cook in chicken broth until absorbed (~15-20 minutes). Fluff rice, stir in Parmesan and butter, season with salt and pepper.

Notes

For extra flavor, garnish with additional parsley or lemon.
