  • 6 pieces skinless, bone-in chicken thighs

Spices and Herbs

  • 1 teaspoon sweet or smoked paprika
  • 1 teaspoon dried thyme or other dried herbs
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried Italian Seasoning
  • 0.5 teaspoon dried oregano

Other ingredients

  • to taste salt and freshly ground black pepper
  • 4 tablespoons butter
  • 1 yellow onion diced yellow onion
  • 4 cloves garlic minced
  • 1.5 cups long grain white rice
  • 1.5 cups low-sodium, fat free chicken broth
  • 1.5 cups hot water

Garnish

  • as needed chopped fresh parsley for garnish

Instructions
 

  • Preheat oven to 350°F (175°C). Season chicken with paprika, thyme, garlic powder, salt, and pepper.
  • Melt butter in an oven-safe skillet over medium heat. Cook onions and garlic for 3-4 minutes until lightly browned.
  • Stir in rice for 30 seconds, then add seasoned chicken, broth, and water. Season with Italian Seasoning and oregano.
  • Cover and bake for 30 minutes, then uncover and bake for an additional 15-20 minutes until liquid is absorbed. Rest for 5-8 minutes.
  • Remove chicken, fluff rice, garnish with parsley, and serve.

Notes

Ensure not to burn the garlic while sautéing for best flavor.
